Happy Wet Pink Saturday !

Hi there Blog Buddies

You know it is the middle of the afternoon on Saturday
and I woke up a couple of hours ago.
I know...can you believe it.
It is raining cats and dogs outside
....England and the USA are playing
in the World Cup of Soccer.
I was with the Euchre ladies last night
...came home past midnight
and slept like a baby.
I have been sleeping only
about 2....3...or 4 hours the past couple of weeks.
Started my new job on Monday,
played baseball
on Tuesday (got a home run
...and not just a piddly bobble one,
but a crank it far and hard one
...yay me)
legs were killing for a couple of days after.
All of the new info from
training with my new job has been
a drain on the old brain.
I guess I just needed to sleep
from the relief of the past two years.
Suddenly I realized
....oh my gosh
....gotta post for Pink Saturday
(have not been near my home computer all week),
gotta get my swaps finished
(a crown swap....swoon & a very vintage summer swap)
and (my huge apologies Molly)
gotta send out my giveaway
and so many countless other things
that need to be dealt with pronto.

Watermelon and Feta Appies
from Christine Cushing

This is just one of those cool combinations
where fruit gets thrown into the savoury mix
and it really creates a taste sensation!
Makes 12 appetizers.
Yield: 12
Ingredients
1/4 medium sized watermelon
1/2 cup crumbled feta (125 ml)
1/2 zest of 1/2 lime
pinch of sumac
12 black olives, pitted, finely chopped
1 tablespoon finely chopped chervil or parsley (15 ml)
freshly cracked black pepper, to taste
1 teaspoon extra virgin olive oil (5 ml)
Directions
Cut twelve wedges of watermelon
so that the wedges are ½-inch thick
and shaped roughly in 3 x 3 x 3-inch triangle.
In a medium bowl,
combine the feta
lime zest
sumac
olives
chervil
black pepper
and olive oil.
Toss gently to combine.
Sprinkle each watermelon wedge
with some of the feta
and olive mixture.
Serve immediately.

Raspberry and Milk Chocolate Cheesecake

180g digestive biscuits
75g melted butter
100g milk chocolate
300g cream cheese
200ml double cream
75g sugar
150g raspberries
icing sugar
chocolate melted, to serve (optional)

Crumble the digestives in a food processor, add the melted butter and mix well. Place in a 20cm flan ring with a push-up base and pat down with the back of a spoon. Melt the chocolate in a microwave or a glass bowl set over a pan of simmering water. Mix the cream cheese, cream and sugar together until smooth. Add the raspberries and stir in, then add the melted chocolate and quickly swirl through. Spoon into the flan ring and smooth the top with a palette knife, then place in the fridge and chill for 2 hours. Serve dusted with icing sugar and a little melted chocolate if you like.

Making it your own
Who doesn't love cheesecake? Use good-quality chocolate like Green & Black's, after all it is for you, too. Leave the raspberries out if you want to make this at other times of the year.


Prickly Pear Pink Margarita's {via 'My Sweet & Saucy'}

Prickly Pear Margaritas
serves 6
3 1/2 cups crushed ice
3 oz. freshly squeezed lime juice
3 oz. frozen limeade
6 Tequila
4 1/2 oz. Cointreau
3 oz. prickly pear cactus juice
3 T. sugar
Lime wedges and kosher salt for garnish

In a blender, add all of the ingredients (minus the garnish) and pulse it until the ice is completely blended. Taste and add more sugar if necessary.
Rub some of the lime around the rim of the glasses and then dip the glasses into the salt. Pour in the drink and garnish with a lime.

  9. Oh, how I wish I could sleep late!

    The margarita sounds delicious. I have an even easier watermelon/feta recipe for you: cut up watermelon, crumble feta and chop up some fresh basil, toss together and there you have it. Easy and refreshing when it's hot and sticky outside. Not that we have had weather even remotely close to that yet. Still, the sweetness of the melon and the salty cheese is just sublime!

    Hope you made a dent in your 'to-do' list yesterday!
